When the 2021 Gingerbread Collection pins were released in November, there were three missing pins: Disneyland Hotel, Grand Californian, and Epcot. The two CA pins were later released, but I have not seen the Epcot Gingerbread pin. Was it ever released?
 
Yep. It was only released in Epcot and sold out rather quickly. All the gingerbread pins did this year.

When they came out they were not at the Pin store near Spaceship earth, or, in the pin section at the new merchandise store (old Mousegears). They were near the checkout counter/lines in the back of the store. I would have missed them but my wife saw them and pointed it out. CM's at the store were sending you to the pin section only. I picked then up the first couple of days they were out.
